Today's meal is a Nigerian meal known as Agidi Jollof which is commonly eaten by Nigerians but can't really say which tribe owns the food. Here are the needed ingredients for today's recipe.
Ingredients
- 500g of biscuit bones
- 200g of corn flour
- 1 seasoning cube
- 1 Onion bulb
- 300ml of tomato paste/Stew
- 1 teaspoons of curry powder
- 1 tablespoon of pepper
- Salt
- Water
- Moimoi wrapping leaves
Cooking Method
- Wash and cook biscuit bones together with diced onions, salt and seasoning cube. Add enough water to cover the bones and cook for 30minutes. Add tomato paste, pepper and curry powder. Cook for another 20minutes and set aside.
- Mix corn flour with water in a pot until you get a Good mixture free of lumps. Boil water and pour into the mixture, stir properly until is becomes thickened. Cook over a low heat and stir continuously until it's solid.
- Add the already prepared stew and mix together with the solid corn flour to get a rich red color. Add small amount of water and allow to simmer. Add Biscuit bones to the mixture, mix and simmer again.
- Dish agidi in moimoi leaves and set aside to cool down before serving.
Now your delicious agidi jollof is ready to be served with any chilled drink of your choice.
