Food for the day: Filipino Adobo Chicken Sauce with White Rice

I want to apologize to you guys for not been consistent with our daily food recipe. Have been extremely busy but promise to be more consistent this time. *Wink*.
Yes, so today will be travelling from Africa to Asia where we will be preparing a dish called Adobo Chicken Sauce which is very delicious when eaten with white rice.
This delicacy is popular among the Filipinos and it's slowly cooked with soy sauce, vinegar and a whole lots of ingredients.
As we normally do it, join me let's make this Filipino meal together and get to know ingredients needed for this dish...

Before the ingredients, since you will have to eat it with white rice, measure 2cups of rice. Wash and cook until soft then drain and set aside (It's preferably to use Jasmine rice. But in the absence of none, you can still make use of parboiled long grain rice).

Ingredients
  • 1 pack chicken (drumsticks- about 12 pieces)
  • 2 cups lite soy sauce
  • 2 cups distilled white vinegar
  • 1 bulb garlic (10-15 cloves)
  • Ginger (same amount as garlic)
  • 4-5 bay leaves
  • 2 tbsps ground black pepper
  • 1 tsp salt
  • 1/4 cup canola oil


Cooking Method
  1. Prepare marinade by dicing garlic and ginger. Add black pepper, bay leaves, salt, soy sauce and vinegar. Stir together thoroughly until it's well mixed.
  2. Wash chicken thoroughly and cut into pieces. Add chicken to marinade, cover and refrigerate for 2hours.
  3. Remove from refrigerator after 2hours. Add oil in a pot over a medium heat and fry chicken until it becomes brown and set aside.
  4. Mince 5 cloves garlic. Saute in same pot until brown. Add chicken back to pot and marinade allow it to cook uncovered for an hour till sauce reduces.

Now your delicious Filipino Adobo Chicken Sauce is ready to be eaten with your already prepared white rice.
