Afang Soup is a Nigerian delicacy which is rich in protein and contain other classes of food. This delicious soup is usually prepared by the Efik (Akwa Ibom and Cross Rivers states) of Nigeria.
- 200g beef or assorted meat
- 20g smoked fish
- Stock fish (optional)
- Shelled periwinkle (optional)
- 2 tablespoonful ground crayfish
- Fresh pepper/ dried pepper
- 1g water leaves 500g Afang leave
- 500ml palm oil
- 1 stock cube (maggi)
- Salt to taste
Cooking Method
- Slice water leaves, Afang leaves and set aside
- Cook the assorted meat, stock fish and dried fish together
- Add palm oil, pepper, crayfish and stock cube. Mix well and add periwinkle. Cover and leave to cook for 10minutes Add Afang leaves, simmer for 5minutes and add water leaves
- Add salt and cook for another 2minutes.
Your Afang Soup is ready. You can serve it with Eba, Semovita, Amala, Pounded yam, Wheat etc
